Cherry Almond Cookies

Tis the season for holiday baking, so I started simple with these Cherry Almond Cookies. Beautiful, red cherries and toasted almonds are a festive addition to these yummy cookies.

Cherries, aside from their festive red coloring boast a whole lot of great nutritional benefits.

Anthocyanin is what gives cherries their deep, rich color and is the flavonoid is responsible for things like reducing inflammation aiding in pain relief.  It's ability to lower blood sugar levels is exceptionally beneficial in the treatment and reduction of type 2 diabetes. So yeah, I like cherries.

As for almonds, we all know they're rich in protein but they also pack lots of healthy fats, fiber, magnesium and vitamin E. Just like cherries, almonds help to lower blood sugar levels, and have been shown to reduce blood pressure and lower cholesterol levels. And if you're looking to snack, almonds are a great snack to tide you over until your next meal.

Cherry Almond Cookies

Ingredients

  • 1/2 cup almond butter
  • 1/4 cup coconut oil; not solid
  • 1/4 cup pure maple syrup
  • 1/4 teaspoon organic almond extract
  • 1/3 cup gluten free rolled oats
  • 1/3 cup oat flour
  • 1/4 cup tigernut flour
  • 1/4 cup potato starch
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch of salt
  • 1/4 cup chopped unsweetened dried cherries
  • 1/4 cup chopped toasted almonds

Directions

Preheat your oven to 350°F and line a baking sheet with parchment paper.  Using a large mixing bowl stir together nut butter, coconut oil, maple syrup and almond extract. next add tiger nut flour, potato starch, oat flour and baking soda and spices.

Continue to stir until well combined. Next add in rolled oats, toasted almonds and dried cherries. Mix well. The mixture might be a bit sticky so use a large spoon or cookie scoop to scoop out golf ball sized dough and place each one on the baking sheet and press them down gently. Be sure to leave a little space between cookies to allow them to spread a bit.

Bake cookies for 9-12 minutes. When they're out of the oven, be sure to let them cool otherwise you'll be left with broken cookies and crumbs... but you could still eat them, haha. Enjoy!
