Chocolate Chip Cookie Cake
- 1-1/3 cup almond flour
- 1/3 cup tapioca starch
- 1/4 cup arrowroot starch
- 1/2 cup xylitol or coconut sugar
- 1 Tablespoon flax meal
- 1 Tablespoon cinnamon
- (optional) 1/4 teaspoon cardamom or nutmeg
- Pinch of Pink Himalayan Salt
- 1/2 cup water
- 1 Tablespoon apple cider vinegar
- 1 Tablespoon Coconut Oil (melted)
- A handful-ish of chocolate chips or a broken up chocolate bar
Preheat the oven to 350°F and line a cake pan with parchment paper.
In a large mixing bowl, combine dry ingredients (except chocolate chippies). Create a "well" in the center of dry ingredients and pour in water, followed by vinegar and coconut oil.
Stir ingredients until you have a runny batter. Pour the batter into prepared cake pan and bake 15-18 minutes.
