"Coal" Macaroons & Activated Charcoal

Charcoal (not the stuff Santa delivers to the naughty boys and girls) is most often used for its purifying properties and you might just consider baking with it, too!

Powdered activated charcoal just also happens to be a popular cooking ingredient in many areas of the world. Though less popular state-side, I did get to experiment with this unique ingredient quite a bit while recently doing some work in Barcelona. Not only does charcoal add a unique look to food and drinks,  but totes all sorts of health benefits thanks to charcoal's ability to absorb organic toxins.

While many emergency rooms keep it on hand to deal with poisoning cases, you might consider using activated charcoal in your daily life. Activated charcoal is great for reducing bloating, improving digestion, and has even been shown to reduce cholesterol.

Maybe you're good in all those areas? Think of it as an anti-aging potion too! Activated charcoal helps prevent cell damage to your kidneys and liver, and supports the health of your adrenal glands, too. It cleanses the toxins and chemicals from your body and it's those toxins and chemicals found in our food and environment that cause the damage and lead to pre-mature aging. So flush to toxins out with activated charcoal... and these deliciously healthy Christmas "Coal" Macaroons!

Christmas "Coal" Macaroons

  • 1/2 cup coconut butter (not solid)
  • 4 Tablespoons maple syrup
  • 2 Tablets activated charcoal
  • 1 Tablespoon Vanilla extract
  • 1/4 teaspoon peppermint essential oil*
  • pinch of pink Himalayan salt
  • 2 cups shredded unsweet coconut

Directions

Begin by preheating the over to 325°F. In a large mixing bowl stir together all of your liquid ingredients and add the pinch of pink Himalayan salt (brings out the sweetness). Next break the charcoal tablets open in stir into the mix. Add the remaining two cups of dry shredded coconut.

This is where is gets messy. Use your hands to make sure everything is well incorporated and begin forming the “batter” into mounds and set on a parchment lined baking sheet. Bake for 15 minutes.

When the alarm has sounded, remove from the oven and let these cool a bit. [Best stored on the counter in an airtight container]. These Christmas "Coal" Macaroons are crisp on the outside and soft and chewy in the center, plus they are a fun and festive treat for any Christmas party.
