We’re approaching those summer months and bathing suit season has us trying to get back to those healthy practices and New Year resolutions we'd set for ourselves. Summertime provides us a little extra reinforcement.

Committing to a healthy lifestyle is more than just running like a crazy person on the treadmill. If you really want to transform your health and create good habits you'll need to add an element of tasty fun.

Your meals should be satisfying—in both flavor and substance—and good for your body. Before you force down another salad you might not want, consider mixing it up and eating your veggies in different ways like in one of these plant-powered smoothies or in these Summer Rolls with Spicy Peanut Dip below.

Plants should be crave worthy.

No one can stick to a healthy eating plan that they don't enjoy and that doesn't taste good. So play around with your veggies! Try them raw, sautéed, roasted, etc. And of course, start raiding your spice cabinet and playing with the different flavor combinations. Ingredients

  • 4 Collard Greens
  • 2 avocados; cut each into 4 long quarters
  • 1 red pepper; cut into strips
  • 4 carrots; shredded
  • 1 zucchini; cut into strips
  • 1 cup of your favorite hummus
  • 1/4 cup kimchi

Dressing

  • 1/4 cup peanut butter
  • 1 Tablespoon tamari
  • 1 Tablespoon agave
  • 1 Tablespoon apple cider vinegar
  • 1 garlic clove
  • 1/4 inch ginger
  • 1 teaspoon sriracha
  • 1/4 teaspoon pink himalayan salt
  • 2-4 Tablespoons water to thin

Directions

Rinse collard green leaves. Lay them flat and remove the stems by cutting along each edge of the stem making two halves.

Chop kimchi and combine with hummus, then place it in a separate bowl.

To assemble the summer rolls, lay down the collard leave halves. In the center of each leaf, place two tablespoons hummus, shredded carrot and one piece of each of the remaining vegetables. Fold up the bottom of the leaf and wrap sides around the filling.

To make dressing, combine ingredients in a small blender and process until smooth.
